Lloyd Constantine was at a loose end, but he didn’t look it. He was seated in Esca, Mario Batali’s entry into New York’s theatre district, casually hip in a sports jacket and slacks, with a tasteful gold chain peeking out from his open collar. He blended with the business-lunch crowd – but he wasn’t one of them. For the first time in four decades, Constantine was unemployed.
