David Wolfson is willing to go to the mat for veggie burgers.

A sixth-year corporate associate at New York’s Milbank, Tweed, Hadley & McCloy, Wolfson, 35, has been lobbying the firm’s cafeteria staff for a few animal-friendly menu items. The results so far: burgers made with ground-up vegetables and grains and a nonmeat stock for the vegetable soup.
